Homemade Creamy Garlic Caesar (Vegan Optional)

I call this my “pantry” dressing, because 9/10 I usually have everything to whip it up!

This dressing is so creamy & delicious, don’t limit it to just a salad.

The possibilities are endless, I put it on everything!

What you will need

  • 1/2 Cup of Raw Cashews

  • 1/2 Cup of Pine Nuts

    ( or 1 Cup of Raw nuts of your choice)

  • 1 Whole Lemon

  • 1/2 Cup of Fresh Parsley

  • 2-3 Cloves of Fresh Garlic

  • 1 TBS of Nutritional Yeast (If you don’t have this, don’t worry! It adds a bit of a creamier taste)

  • 2 1/2 TBS of Vegenaise (If you don’t have Vegenaise you can use regular Mayonnaise)

  • 2 TBS of Water

  • 1/2 Cup of Unsweetened Plant Based Milk (If you don’t have plant based milk you can use regular milk!)

  • 1/3 Cup of Plant Based Parmesan Cheese (I use Good Planet brand, its my favorite! If you don’t have plant based Parm, you can sub for regular Parm cheese!)

  • Food Processor or Blender

Here we go!

  1. Grab your food processor or blender and dump in your 1 whole Cup of Nuts.

  2. On a cutting board, cut your garlic cloves in halves, as well as your Fresh Parsley Stalks, & Lemon.

  3. Put Garlic & Parsley in the blender with your nuts.

  4. Juice both halves of Lemon into the mix (make sure you remove your seeds!)

  5. Then add Cheese & Nutritional Yeast.

  6. Last Add the Vegenaise & Milk.

  7. Place lid on processor then blend for a good couple minutes until parsley is finely chopped! (Your dressing should be turning a nice light green!)

  8. Open lid & add your 2 TBS of Water.

  9. Pulse Again for a couple minutes. Now your dressing should be super smooth & creamy.

  10. At last! Time to taste. If dressing is a little thick, feel free to add a little more milk or water.

  11. Pour dressing into a mason jar or a nice container & keep in the fridge!
