Gooey Banana Crumb Cake

Never know what to do with those 3 bad bananas? SAME!

Unit now..This crumb cake is everything you need & more.

Reheat and top with some vanilla ice cream.

You’ll be eating this for breakfast, lunch, dinner & maybe even desert.

What you will need

For the Mix:

  • 3 ripe bananas (I usually freeze my ripe bananas and save them for a rainy day like this)

  • 1/2 cup Room Temp Butter (1 stick unsalted)

  • 2 Cups sugar

  • 2 Eggs

  • 1 tsp Salt

  • 3 tsp Baking Powder

  • 2 Cups Flour

  • 1 tsp Vanilla

  • 1 Cup Milk (I used Ripple Plant Based Milk)

  • Large Baking Dish

Keep Dry ingredients separate from the wet.

For the Crumb Topping:

  • 1 Cup Cubed Butter (this is NOT room temp) (2 sticks)

  • 2 Cups Light Brown Sugar

  • 2 Cups Flour (for the topping I used GF flour, but you can also use regular)

  • Cinnamon (for the very end!)

For the Glaze:

  • 1 Cup Powdered Sugar

  • 2 TBS Milk (I used plant based!)

Lets Start!

  1. Preheat oven to 350

  2. In a bowl stir together your dry ingredients (Salt, Baking Powder, & Flour)

  3. In a large bowl mash the 3 ripe bananas

  4. Add in wet ingredients to the mashed bananas (Butter, Sugar, Eggs, Vanilla, & Milk)

  5. Mix together well (Mixture will still look lumpy due to bananas & butter)

  6. Add your dry ingredients to your wet mixture & stir together well

  7. In a large separate dish add your cubed butter then add your light brown sugar & flour

  8. With a fork or pastry cutter (using force) mash together ingredients to create a crumble. This may take some time! (when using the GF flour crumbles will be smaller than regular flour)

  9. In a large baking dish pour in half of your banana mixture, using a spatula or spoon spread the mix so it is covering the whole pan.

  10. Pour 1/2 of crumble mixture on top. Spread evenly

  11. Layer the rest of your banana mixture on top of the crumble then finish again with the rest of the crumble.

  12. Once the crumble is layered on top add a few dashes of cinnamon

  13. Bake in oven for 55 mins

While cake is baking, lets make the glaze!

  1. In a bowl mix 1 Cup Powdered Sugar & 2 TBS Milk

  2. Mix until you get a liquid consistency

    After 55 min, take out cake & let cool for 20 min

    Drizzle cake with glaze then cut & serve! This cake keeps very well & doesn’t need to be kept in the refrigerator! I reheat in the microwave and serve with some vanilla ice cream for desert.
